How did you decide on the name of your restaurant?

Ashes's has been in our family since 1849. It would be an awful shame to change the name. 

What do you wish you had invented?

Any Apple product. 

How do you keep up to date with customers’ needs and wants?

Listen & interaction with the customer's helps

Do restaurants have any clues as to when a Michelin inspector is dining in their restaurant?

None

What is the coolest thing you own?

My dog, Freckles. He's uber cool! 

What’s the best advice you have ever received?

From my Mother. Be Kind. Enough said. 

What did you have for dinner last night?

Blasket Island Lobster, with melted Kerry butter & new potatoes from Maharee's (Sorry, It is the season)

What do you think of restaurant critics?

Professional one's: mostly they know good food, and are fair. But hey, everyone's a restaurant critic that has a smartphone!

What four ingredients are necessary in your kitchen?

Local Seafood, Local Vegetables, Kerry Dairy products & local Lamb.
