What three habits will improve your life?

Getting up earlier, exercising daily and spending time with friends. 

For what in your life do you feel most grateful? 

To be involved in a family business obviously has its challenges. However, to be able to spend so much time with your immediately family and be in a situation where we are able to grow our business together is something I’m sure we will all be forever grateful for.

What do you usually follow when making decisions, your head or your heart?

Usually a combination of both. But I think it is important to follow your heart. Your initial gut feeling is rarely wrong. 

What is the best to start the day?

A fresh Juice, a good breakfast and a strong coffee, we like cappuccino’s. 

What always makes your smile?

Our Golden Retriever, Bailey. She’s new to the family and she makes us laugh a lot! She is quite playful.

What are most people surprised to learn about you?

I think when I tell people that I’m actually qualified as an Engineering and Technology teacher they get the most surprised!

What’s the best advice you have ever received?

Before we opened on August 31st, 2018, my uncle rang me and he said ‘In business, a clever person learns from their mistakes, but a really clever person learns from other peoples mistakes.’ This is something we try and implement into our business strategies.

What is your go-to -midnight snack?

For me, it has to be Pizza! Easy to cook and delicious.

What is the most interesting thing you have read or seen this week?

I just read the book ‘How to set the Table.’ Being in the food industry I have taken so much from it. I really enjoyed the book.

What skill or craft would you like to master? 

Playing a musical instrument. Such a useful skill in Ireland!!

How did you decide on the name of your restaurant? 

It was our brother, Paul, actually came up with the name. We get our seafood delivered in Fish Boxes, and we serve our take out food in Fish Boxes. It just felt right and it was so bizarre that it had a ring to it! He’s in a band so I guess they’re used to brainstorming names of songs and stuff!

How do you keep up to date with customers’ needs and wants?

Social Media, an unbelievable Platform to interact with the public.

What do you think of restaurant critics?

We believe that everybody is a restaurant critic or foodie in their own right. We have the belief that if your food is has something that can be complained about, then there it isn’t perfect. And we strive for perfection. I’m a believer that the customer is always right anyway, except when we’re talking about football!
